
Dosing of salt solutions in pasta processing
Finished pasta products like spaetzle or tortellini are precooked in salt water. For this purpose, the dosing of a 24% saline solution is effected in industrial standard in different blanching devices. The dosing is controlled via a measurement of the inductive conductivity. The set value is about 20 mS (about 1% saline solution). When filling the plants, metered addition is done via a water meter proportionally.
